CSN Store Preview~ and Giveaway


I promised to let you know what I was going to review from CSN Stores, and since I put my order in yesterday,  I thought I'd let you know what should be shipping to my house shortly! I'm excited to be trying out some silicon bakeware. I chose this set, Trademark Global Smartware 19 Piece Bakeware Set in Gray, in part because it is made in the USA, which I prefer to trust over "made in China" products. The only silicon products I currently own are some stand-alone muffin cups that I've been using, and have been impressed with. Now I  am looking forward to seeing how the pans and the mat perform. 

I'm also getting a new SMALL cookie scoop! I love my middle and larger-sized scoops, and am interested to see how this OXO grip scoop compares to them.

I love making gingerbread cookies at Christmas. My favorite is this recipe from Elana's Pantry:

5 cups blanched almond flour
1 tablespoon cinnamon
1 tablespoon ginger powder
¼ teaspoon cloves - ground
½ teaspoon celtic sea salt
1 teaspoon baking soda
½ cup grapeseed oil
½ cup agave nectar
1 tablespoon vanilla extract
½ cup yacon syrup
2 eggs
1 teaspoon lemon zest

1. In a large bowl, combine almond flour, cinnamon, ginger powder, cloves, salt and baking soda
2. In a smaller bowl, mix together grapeseed oil, agave, vanilla, yacon, eggs and lemon zest
3. Stir wet ingredients into dry
4. Chill dough in freezer for 1-2 hours
5. Roll out dough between two pieces of parchment paper to ¼ inch thick
6. Remove top sheet of parchment paper, cut out cookies using a medium gingerbread man cookie cutter
7. Decorate with nuts and dried fruit --we used pieces of lemon rind for the mouth
8. Transfer with a spatula to a parchment lined baking sheet
9. Cook at 350° for 15 minutes
10. Cool and serve

Here is my favorite sugar cookie recipe


Ingredients

* 1 1/2 cups butter, softened
* 2 cups white sugar
* 4 eggs
* 1 teaspoon vanilla extract
* 5 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon salt

Directions

1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
3. Bake 6 to 8 minutes in preheated oven. Cool completely.
